I’m back! I don’t really have an excuse for not posting sooner, but have no fear, I have been making new things that I will be sharing with you! I love smoothies and it is such a great way to get in extra veggies and fruit, especially for the kiddos. I came across this recipe on Pinterest (gotta love it!) the other day and it sounded yummy but needed to be adapted a smidge to be dairy-free. Oh, and it is also vegan and gluten-free too!
Serving Size: Just enough for momma and toddler 😉
1 frozen banana, cut into pieces
1 Tbsp peanut butter or an alternative
1/2 cup dairy-free yogurt, Greek style if you can find some
1 cup unsweetened dairy free milk
4 cups baby spinach
Stick all the ingredients in the blender until desired consistency. When freezing your banana(s), it is easiest to peel and cut BEFORE freezing, peeling a frozen banana is a pretty mind-numbing task. You could use any type of dairy free milk and yogurt that you prefer but I used coconut milk and yogurt and it was so yummy, it had a coconut-y taste with a hint of peanut butter! I love adding spinach to smoothies because you really can’t taste it but you know you are getting great nutrients. This smoothie is definitely grown-up and kid approved!
