I’ve made these cookies several times, and while my toddler loved them I was never ecstatic about them (they were still good, but not OMG I want to eat ALL OF THESE good). Then I came to the realization that I wasn’t gaga over these cookies because I was leaving out the most important ingredient…chocolate chips! Seriously, the chocolate chips make ALL the difference.
Healthy Cookies
1 cup oats
1/2 cup oat bran
1/3 cup nut butter
2/3 cup unsweetened applesauce
1/4 cup chocolate chips (use a dairy-free brand, like Enjoy Life!)
1/4 cup raisins (optional)
2 mashed bananas
1 tsp vanilla
1 tsp cinnamon
Mix all the ingredients together and spoon onto a non-stick or greased cookie sheet. Bake at 350 degrees for 20-30 minutes. Voila! A guilt-free cookie.

What kind of nut butter do you use?
I used peanut butter in this batch, but I would think most anything would work great. The next time I make these cookies I’m going to try them with sunflower seed butter 🙂
